        Owners of Havana House have played a part in Florida's love for fine Cuban cuisine

        Havana House owners Frank and Rosie Ruiz opened their restaurant in Lecanto, FL over eleven years ago after a lifetime spent in the food business. Frank previously worked for more than 20 years as a Winn Dixie store director. Rosie was director of catering for Hilton in South Florida. Together they had also owned several restaurants in South Florida as well.

        After moving to Citrus County, they opened their new café which they operate with their two  sons Franklyn and Geoffrey.

        "I learned to cook when I was 10 from grandmother," says Rosie. "I started when I was very young because my mother was a single parent and I had to help out." Rosie is a first generation Cuban-American and her husband was born in Cuba.

        From her grandmother she learned the secrets of creating superb picadillo (the Cuban ground-beef dish that many compare to Mexican chili) and sofrito (the combination of tomatoes, peppers, garlic, onion and herbs that is the base for many Cuban dishes).

        "Food is our passion and is something we've always known and loved."
